

Either version of the Collection (CE and normal) will include both of those classes. Now, having said that, I'd forgotten that Necromancer and Warden are not included with ESO+. The reason I was suggesting ESO+ is that it's all content, and there's no additional commitment beyond the month to month purchases. To be honest, you'd need to look at the store page to verify exactly what's included with the collector's editions. Prior to last year it was always a full motif set (all three weights, full weapons.) Last year had two outfits, one was all weapons and armor weights, the other was a single set of signature armor (I'm not sure, one of those may have been a preorder bonus), and this year the Ascendant armor is just the armor, there's no weapons associated with it, and it doesn't have light/medium/heavy variants. I think every year has included an outfit.

So, the crown crates aren't included (I think.) The Collection does not give you the preorder bonuses.
